Oat + Banana Blender Pancakes

These healthy pancakes are absolutely delicious and are dairy-free, gluten-free and have no added sugars (unless you top with maple syrup, which you should!).

Makes 12 pancakes

Ingredients

  • 2 ripe bananas

  • 2 eggs

  • 1/2 cup unsweetened alt milk (oat, almond etc)

  • 1 teaspoon vanilla extract

  • 1 cup old fashioned oats, gluten-free if preferred

  • 1 tablespoon ground flax seed

  • 1 tablespoon chia seeds

  • 2 teaspoons baking powder

  • ½ teaspoon ground cinnamon

  • ¼ teaspoon salt

  • Coconut oil or olive oil for cooking

Directions

  • Add all of your ingredients to the blender and blend on high for 30 seconds. Let batter sit.

  • Heat up a non-stick pan over medium-high heat.

  • Grease your pan with olive or coconut oil.

  • Pour batter (using 1/4 cup measuring cup) onto the pan. Cook for 2-4 mins on each side.

  • Serve with additional toppings (bananas, nuts, syrup, coconut cream) and enjoy!
