Grain-Free Banana Bread
Makes 2 loaves
1 cup coconut flour
1/2 cup almond flour
2 tablespoons flax meal
2 teaspoons baking soda
2 teaspoons salt
4 eggs
6 bananas
1/4 cup coconut oil
2 tablespoons maple syrup
1 cup almond milk
2 teaspoons vanilla extract
2 teaspoons ACV
2 cups chopped walnuts
Heat oven to 350 degrees. Prepare loaf tins with coconut oil and parchment paper. In a large mixing bowl, whisk together the coconut flour, almond flour, flax meal, baking soda and salt.
In a separate bowl, whisk together the eggs, almond milk, coconut oil, vanilla extract and apple cider vinegar. Mash the bananas to desired consistency and add to bowl with wet ingredients.
Add wet ingredients to dry ingredients and stir until just combined. Fold in walnuts. Transfer batter to prepared loaf pans and bake for 50-60 minutes, or until top is set and browned. Cool in pain for 15 minutes and then transfer to wire rack to cool completely.
